This week has been overflowing with moments of gratitude! And honestly, the more I intentionally look for them, the more I notice. Gratitude has this magical way of creating peace and joy in our hearts—it’s not just a feel-good phrase. Science actually shows that gratitude activates areas in our brain associated with positive emotions, reduces stress hormones, and even strengthens our immune system. Who doesn't want that, right! Just a little practice of noticing the good can literally rewire your brain for more joy.

Ingredients

  • 2 tablespoons olive oil
  • 3 medium carrots peeled and diced
  • 2 celery stalks diced
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 2 teaspoons dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 cups low sodium chicken broth (i use bone broth)
  • 2 dried bay leaves
  • 1 pound boneless skinless chicken breasts
  • 8 ounces pasta or rice
