Fall Flavor: Your Cozy Autumn Harvest Bowl

Straight from my Substack, here’s a nourishing seasonal recipe you can use this week.
Warm, grounding, colorful… the way fall loves to feed us.

Cozy Autumn Harvest Bowl
Ingredients:

  • 1 small butternut squash, peeled and cubed
  • 2 sweet potatoes, cubed
  • 3 carrots, sliced into thick coins
  • 2 beets, peeled and cubed
  • 2 cups Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil (or avocado oil)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp dried thyme (or rosemary for a cozier flavor)
  • Optional: drizzle of maple syrup or balsamic glaze for finishing
